Pakora. It's the most satisfying meatless thing I've eaten.  How good is it?  It's cheeseburger good.  It's skillet pizza good.  It's taco good.  It's Ninja star roll good.  It's almost gyro-good, and we all know homemade gyros comprise the summit of Mount Putitinmymouth. And unlike all of the above, it's meatless.  How can this be?  How does this mouth-marvel navigate the forest of texture, hurdle the gulch of expensiveness and bound up the steps of flavor two-at-a-time without any legs? Billions of people experimenting in the cradle of flavor over thousands of years, that's how.  I'm often asked what my favorite national cuisine is and there are...

There are as many methods for brining and smoking salmon as there are people who have attempted it.  Secret methods and ingredients abound, and I'll confess to having tried more than a few of them.  I've brined in fruit juice and soy sauce, basted with honey and maple syrup, marinated in crushed pineapple, garlic, fresh dill, and attempted all manner of exotic flavor combinations.  I've used everything from a light to fully saturated wet brines (26% salt by weight) as well as pure salt dry brines and just about every ratio of salt/sugar.  All of them can be made to work, but many...

The day before Mother's Day, my wife hinted that she wanted sushi.  She said: "I want sushi." which is precisely the level of subtlety I'm capable of interpreting accurately. My wife's favorite sushi is from Hayashi's (You Make the Roll) in Kailua Kona, and it's called the Ninja Star.  Crispy tempura shrimp.  Spicy Ahi tuna. Buttery avocado.  Frosted with bright orange Masago (capelin roe) that burst with the flavor of the ocean.  It is palate poetry, and it was my wife's favorite before she was afflicted with gluten sensitivity and we learned she ALSO had a severe egg allergy (there's eggy mayo in spicy tuna, and tempura has wheat flour and egg). ...

Usually, quiche has a crust and a Frittata does not.  This recipe has a "crust" made of cheese, but I'm calling it a frittata anyway. Replacing my typical shredded potato crust with shredded cheese was a happy experiment owed to a temporary abstention from carbohydrates, thus the word 'paleo' in the title.  I'd be shocked if a doctor endorsed this substitution, so I didn't ask one because being shocked is definitely bad for you. As delicious as a crispy hash brown crust is, I didn't miss it. While sharing it with my children (in a stunning turn of humanitarianism) someone commented "mmmmf...

Don't let my tan fool you, I'm a Pacific Islander.  Yes, my Island is a bit North of Hawaii, but let's not split hairs. We were recently back in Hawaii, staying at the beautiful Sliding Wall house just up the mountain from the world class beaches of the Big Island.  I would wake up to a panoramic view that stretched from the snow-capped peak of Mauna Kea, past Mauna Loa and Hualalai to the sparkling Pacific.  From this house, it feels like you have the largest Hawaiian island all to yourself. The Big Island is renown for fishing and also produces exquisite...
